It was our pleasure to meet
Paul Williams, owner of the House of Bread. It was very clear throughout
our interview that Mr. Williams has drive and passion for what he
does. You might say just what does he do? He thrives on being great
in business and to grow through diversification.
Do you plan on expanding your business?
Yes, we are looking at doing a new marketing
tip this year. House of Bread has been known for its catering style,
but we are branching out to Florida and Georgia. We will be specializing
more with the baking and pastry side and designer cakes. We plan
to drop the catering to 20% and boost the cakes to 80% of the business.
We want to provide a more fine cuisine with catering, which the
market at this time is not very demanding due to the economy. The
cakes are still demanding, so we are trying to find a way to grab
the people by renaming it, still honored by the House of Bread.

How are you relating pastries to keeping
people healthy?
I am in school now for therapy and I have some knowledge from culinary
school. I learned about the nutritional background and the benefits
of how to take care of your body, as well as, what food does to
the body. I have knowledge on spices, herbs, meats, seeds, poultry,
fish, and seafood. How they live, how they are cultivated, and what
it does for the body once you intake it, even during digestion.
Also, therapy is teaching me more about the blood flow, the skeletal
and nervous system, the lymph nodes. There is so much detail in
food that it tells you about your body, but on the medical side
it tells you how your body reacts to certain things when combined
with foods. So, keeping out the sweets and using more natural things
when it comes to catering and being healthy. Also, we have started
a tea and wellness business where you can get the wheat germs, black
seed, the oils, spices, and the herbs with the new business we are
combining two different businesses under one umbrella. It will be
very exciting to all those that want to learn.
When does that project come out?
The Tea and Wellness project will spring out this summer. It has
been a working project for about two years now. The therapy will
be out in mid April. We are getting national certification at the
end of April. Then we will look at beginning some curriculums. We
already have it done '85 professors and ministers have looked at
it and they are waiting on the final product from us.
